The CEO of Sticks ’n‘ Sushi, Andreas is an experienced hospitality professional who previously worked at Wagamama from 1995 to 2010, gradually rising from restaurant general manager to director of international licensing. Joining Sticks ’n‘ Sushi as the operations director in 2011, Andreas assumed the role of CEO in September 2019. He has played a key role in the group’s expansion and success, with the group counting 26 restaurants in Copenhagen, London, and Berlin today. Andreas remains dedicated to propelling Sticks ’n‘ Sushi’s achievements in both established and emerging markets. Recently, the company launched a loyalty programme aimed at driving its continued success and fostering strong relationships with its loyal guests.

Florent Lunel joined Big Mamma as Food&Beverages Director four years ago. Passionate about food, he pays great attention to the quality of the product sourcing within the group, always thinking of new ways to create high standard recipes. Big Mamma Group counts 23 trattorias in France, England, Spain and Germany including La Felicità (biggest Food Market in Europe). Certified B-Corp, each location has very strong objectives in terms of social and environmental responsibility. Florent ensures with his team to serve the best food & beverage, sustainably bought with ingredients sourced from local or Italian producers, primarily directly, always unprocessed and in season.

Katrin Wissmann is the Executive Editor of european foodservice media and a long-standing editor of the German B-2-2 journal foodservice. She studied journalism and American Studies in Mainz (Germany), Pamplona (Spain) and in Middlebury, VT, (USA). After gaining initial professional experience in print, radio and television, she joined the editorial teams of foodservice and foodservice Europe & Middle East in 2006. Before her current position, which includes content planning and speaker coordination of the European Foodservice Summit, Katrin was Executive Editor of the international trade journal foodservice Europe & Middle East.
