Technologie und Biotechnologie der Lebensmittel. Seit 2016 liegt der berufliche Schwerpunkt auf pflanzlichen Proteinen, insbesondere auf deren Funktionalisierung, Gewinnung und Anwendung in Lebensmitteln. Seit 2022 umfasst die T\u00e4tigkeit zudem die vertikale Integration von Lebensmittelwertsch\u00f6pfungsketten zur Herstellung pflanzlicher Proteinzutaten, mit Fokus auf Leguminosen aus der heimischen Landwirtschaft. Bis 2025 erfolgte dies im Projektmanagement bei der BayWa, seit Oktober 2025 im operativen Gesch\u00e4ft bei der BiGuPro GmbH. Erg\u00e4nzend besteht technischer Support f\u00fcr die AgriFoodTech Venture Alliance, ein Investmentvehikel zur F\u00f6rderung von AgriFoodTech-Start-ups.<\/p>\n<p>BiGuPro GmbH (Tochtergesellschaft der Bindewald &amp; Gutting M\u00fchlengruppe, Deutschlands gr\u00f6\u00dfte familiengef\u00fchrte M\u00fchlengruppe) hat den Fokus zur Entwicklung &amp; Skalierung regionaler, pflanzlicher Proteinzutaten f\u00fcr die Lebensmittelindustrie (BiGuPro &#8211; Funktionelle Leguminosen-Ingredients). BiGuPro GmbH ist im Bereich der vertikalen Integration von Lebensmittelwertsch\u00f6pfungsketten t\u00e4tig und fokussiert sich auf die Herstellung von pflanzlichen Proteinzutaten. Ein besonderer Schwerpunkt liegt auf Leguminosen aus heimischer Landwirtschaft sowie deren Nutzung f\u00fcr nachhaltige, pflanzenbasierte Lebensmittelanwendungen. Produkte sind gesch\u00e4lte Leguminosen, Proteinmehle und Proteintexturate f\u00fcr die
