Lehrstuhls f\u00fcr Lebensmittelchemie an der Technischen Universit\u00e4t Dresden. Seine Forschungsschwerpunkte umfassen verarbeitungsinduzierte Reaktionen von Lebensmittelinhaltsstoffen, insbesondere Proteinen, die gezielte Modifikation nat\u00fcrlicher Nanostrukturen wie Caseinmizellen sowie die Entwicklung von Analysenmethoden zur Qualit\u00e4tsbewertung von Lebensmitteln.<\/p>\n<p>Prof. Henle ist Tr\u00e4ger zahlreicher Auszeichnungen, darunter der Innovationspreis des Milchindustrieverbandes und die Joseph-Koenig-Gedenkm\u00fcnze der Gesellschaft Deutscher Chemiker. Neben seiner wissenschaftlichen T\u00e4tigkeit ist er Mitgr\u00fcnder und Co-Gesch\u00e4ftsf\u00fchrer der \u201eLohrmanns Brauerei GmbH\u201c, der ersten Universit\u00e4tsbrauerei Deutschlands, sowie Mitgr\u00fcnder der \u201ePeptrition GmbH\u201c. 2024 startete er den Podcast \u201eFood Facts \u2013 der Lebensmittelchemie-Podcast der TU Dresden\u201c.<\/p>\n<\/div><\/section><\/p><\/div><\/p>\n","protected":false},"excerpt":{"rendered":"<p>T.U.
