av-k7yuci90-a18c0bcded5d1c9d05f50a7123e6837d '   itemscope=\"itemscope\" itemtype=\"https:\/\/schema.org\/CreativeWork\" ><div class='avia_textblock'  itemprop=\"text\" ><p>Prof. Dr. Ute Weisz ist seit Oktober 2023 Professorin f\u00fcr Plant Proteins and Nutrition an der Technischen Universit\u00e4t M\u00fcnchen. Ihre Forschung konzentriert sich auf den Einfluss von Verarbeitungsprozessen auf die molekulare Struktur, Funktionalit\u00e4t und ern\u00e4hrungsphysiologische Qualit\u00e4t pflanzlicher Proteinzutaten sowie auf deren Wechselwirkungen mit sekund\u00e4ren Pflanzenstoffen.<\/p>\n<p>Zuvor war sie Professorin f\u00fcr Lebensmittelwissenschaften an der Universit\u00e4t Bonn und fast 20 Jahre am Fraunhofer-Institut f\u00fcr Verfahrenstechnik und Verpackung (IVV) t\u00e4tig, zuletzt als Leiterin des Bereichs Prozessentwicklung Lebensmittel. Dort arbeitete sie eng mit Industriepartnern zusammen und begleitete mehrere erfolgreiche Technologietransfers und Ausgr\u00fcndungen, darunter Prolupin und endori. Bereits 2016 initiierte sie Forschungsarbeiten zur Fermentation pflanzlicher Proteine f\u00fcr Milchalternativen und geh\u00f6rte damit zu den fr\u00fchen Akteuren auf einem heute dynamisch wachsenden Forschungsgebiet.<\/p>\n<p>Ein besonderes Anliegen von Prof. Weisz ist die Verbindung von Grundlagenforschung mit anwendungsorientierter Forschung und Technologietransfer. Durch ihre langj\u00e4hrige Erfahrung in Wissenschaft und Industrie bringt sie beide Perspektiven zusammen, um wissenschaftliche Erkenntnisse in innovative und nachhaltige Lebensmittelkonzepte zu
