Von 2016 bis 2020 war er Hochschullehrer und Leiter des B.A.-Studiengangs Vegan Food Management an der Fachhochschule des Mittelstands (FHM), und wurde dort 2018 zum weltweit ersten Professor f\u00fcr Vegane Ern\u00e4hrung berufen. Seit 2022 ist er Lehrbeauftragter an der Wilhelm B\u00fcchner Hochschule. Schwerpunkte seiner wissenschaftlichen Arbeit sind die Themen Vegetarismus\/Veganismus, alternative Ern\u00e4hrungsformen sowie nachhaltige Ern\u00e4hrung; dazu zahlreiche Ver\u00f6ffentlichungen. Co-Autor u. a. des Standardwerkes \u201eVegetarische und vegane Ern\u00e4hrung\u201c (4. Aufl. 2020), \u201eVegane Ern\u00e4hrung. Schwangerschaft, Stillzeit und Beikost\u201c (2. Aufl.2021), \u201e\u00d6fter mal die Sau rauslassen\u201c (2022) und \u201eVegane Kinderern\u00e4hrung\u201c (2. Aufl. 2024).
