Striving to make Europe the first climate-neutral continent, the European Union has issued the European Green Deal. Aiming to overcome climate change and environmental degradation, major legislative initiatives are to transform the EU into a resource-efficient and competitive economy while ensuring zero net emissions of greenhouse gases by 2050 along with economic growth decoupled from resource use.
In this Digital Talk, he will give a general overview of the EU’s Green Deal and Farm to Fork Strategy and lay out which future initiatives will be critical for the restaurant industry and how foodservice operations should prepare for them.
With regard to more sustainable operations, but also in view of growing guest demand, restaurateurs are increasingly looking at alternative proteins. The Good Food Institute (gfi) is a nonprofit working internationally with businesses, policy makers, scientists and researchers to create a world where alternative proteins are no longer alternative.
In her presentation, she will share insights into what consumers – both vegans and flexitarians – are missing on menus and what it takes in terms of marketing and messaging to drive sales and consumer acceptance of animal-free products.

Carlotte Lucas is based in Amsterdam, where she supports the food industry in its efforts to make plant-based meat alternatives available across Europe and prepares the industry for the arrival of cultivated meat. She is in charge of corporate commitment at The Good Food Institute Europe and establishes contacts with companies and investors throughout Europe to drive investments and innovations in sustainable proteins. Before joining The Good Food Institute Europe, she worked as a change management consultant for Deloitte, where she advised companies and stakeholders on big restructuring programmes.

Arnaud is a public affairs professional who has been the main coordinator of Serving Europe, the branded food and beverage service chains association, since February 2018. He was then officially appointed as the Secretary General of the Association in June 2021. In this role, Arnaud advises branded chains on future EU regulatory changes and ensures their voices are heard in areas that greatly impact the sector such as sustainable food and sourcing, packaging transition, nutrition and diets, etc.
Prior to joining Serving Europe, Arnaud acted as an independent lawyer in the field of commercial litigation.
A Belgian national, Arnaud holds a Masters in private law from the Université Libre de Bruxelles.
